Cookin w Coupons

Soups' on this week.  Easy to see meals include chicken noodle, chili and vegetable stew.  All the ingredients are on sale, and should be stocked up for the coming cold months.  However there are some less obvious meals this week that can save you some money as well.  

Meal #1  Honey Mustard Chicken Thighs
 Every time I see chicken on sale this low I think I need to get creative.  I like Thighs and legs!  So why do I shy away from buying it in bulk?  Probably because I forget to just go ahead and bag it up and pop it in the freezer.  Do this:  Put 1.5 pounds of chicken thighs or legs in a zip bag.  Pour 1/2 cup of honey, 1/2 cup of mustard and 1/4 cup of butter pats.  Then freeze.  When you need dinner on a dime, pull the whole bag out.  Let it thaw while you're at work, then bake on low, at 350 for an hour and a half.   These are a slow cook.  You could put the entire contents in the slow cooker.  Yummy!  Serve with a nice side of vegetables and salad.

Meal #2  Ham Jubilee
 Often, we skip buying ham steaks.  Yet a tiny bit of ham can go a long way to make a low meat/high taste meal.  Pick up a couple and plan to include them in a ready to go box of potatoes.  I like cubed ham mixed in with two packages of Betty Crocker Jubilee potatoes.  These are cheesy and easy to fix.  The ham satisfy's the family to make them feel the dish is not a side, but a main meal.  Don't tell my husband they are from a box, he thinks I work on this bake for a long time!
From Stock:  Jubilees were on sale last week, I stocked up. Any type will work. 


Meal #3  Pork Loin 
 Apples are everywhere.  I have two trees, and the neighbor tried to give me a box of his.  Time to cook with apples.  Place an entire pork roast, 6 peeled and sliced apples, one small onion, and some dried cranberries in a roasting pan.  Roast on 375 for an hour.  I do enjoy the Ocean Spray dried Cranberries, they plump well when the juice of the pork loin roast.  Here's the kicker, eat the apples!  They are good once cooked and make a good side.  Serve with Rhodes Texas Rolls.
