Cookin with Coupons


Ham is on sale.   Most people are standing around the ham bin deciding which one looks good for Easter Sunday.  Not me!  I'm deciding which meals I'm going to use ham to fix in the next few months.  Ham is a great way to add meat to your meals without a lot of cost.  Yep, I said it's economical.  A little planning can give you a quick easy meal for less.

Here are my Ham favorites:


1.  Ham Fried Rice.  
I go ahead and prepack up some ham for this meal.  1 cup of tiny cubed ham in a ziploc container.  First, Steam some white rice and set it aside.  you can do this a day before if you have the time.  I never do!  Then I use a two skillet system.  In one skillet I scramble some eggs.  I use a lot of eggs!  Normally 4.  Then in the second skillet  add some cooking oil.    The meat goes in first!  This will give you good flavor.  Set your burner to med high and let it sizzle.  After you start to see a little color on the ham, add the rice.  Let it sizzle.  Then you can add eggs, and finally 2 tablespoons of oyster sauce.  The oyster sauce gives you the take out flavor to your rice.  This is a good meal that satisfyies everyone in the family, it's low cost and usually they all have two bowls. 

2.  Ham and Potato Bake
If you're looking for an easy carry in dish, this one is great.  Take 8-10 medium potatoes and boil them on high for 10 minutes.  Then lower the heat until they you can poke them with a fork and they are soft.  Drain them and chop into a baking dish.  Add 1 stick of butter, 1 small jar of pimentos, 1/2 block of velveeta cubed, 1 cup of cubed ham, and 1 cup of milk.  Bake covered at 350 for 30 minutes, then uncover and bake 15 more minutes.   
   
3.  Ham and Bean Soup
Take 2 cups of northern white beans and 4 cups of water and boil for 25 minutes.  Then drain and transfer beans to a crock pot.  Add 1 cup of chicken broth, 1 cup of cubed ham, 1 tsp of thyme, 1 tsp brown sugar, 1 tsp black pepper, 1 tsp salt to the pot.  Sometimes I get wild and add some chopped carrot and onionSet on 4 hours.  After 3 hours, add 1 T flour and water well mixed to thicken.   I often serve with cornbread.
