Cookin' With Coupons

Snow's a comin!  I've been thinking about this last blast of winter for a few days.  I have some hearty chowders planned to keep warm.  I like to fix them in the crockpot so the family can warm up whenever they want a bowl. 

Chowder #1  Autumn Chowder
We have bacon from our Penny Pinchers and the bacon is the base for this chowder.  In a large pan cook bacon until crisp.  Remove the bacon and set aside.  Now in the bacon drippings let's saute an onion, and some carrot.  I love picking up the Green Giant baby carrots and slicing them in the food processor.  Then as I'm cooking they are already chopped and ready to go.  When the onion and carrot are soft, add some chicken stock and a tablespoon of flour to thicken. Stir until mixed and transfer to a crockpot.  Next in a large pot, let's peel and cube potatoes.   Bring to a boil until soft.  Once the potatoes are soft you can add them to the crockpot.  Now add a can of corn, some a cup of milk, and if you're daring, a package of betty crocker instant mashed potatoes.  I like my chowder thick!  Set on low all day for a warm wonderful bowl.  Top with bacon and cheddar cheese as you fill your bowl. 

Chowder #2  Beans N' Mac
I usually have some elbow macaroni in my stockpile. This chowder makes the most of some shelf stable items. I make this on the stove in one giant pan, then transfer to the crockpot for warming.  First let's saute one small onion, and one garlic clove in olive oil. Once tender, add two cans of Hunts  chopped tomatoes, add 2 cans of Swanson Chicken Booth, some basil, and 2 cups of water. Next you can add 2 cans of S&W Northern beans and half of a bag of Creamette Elbow Macaroni.  Bring all to a boil for about 15 mintues, or as long as it takes to vacuum the house.  Reduce heat and move to the crockpot.   Add parselty, pepper and salt to taste.  This soup is also great with crackers.

Chowder #3  Ramen Noodle soup
My teen loves ramen noodles, but the rest of us like to have a little more in our soup.  So this recipe is quick and easy, but fills one up.  Use your left over Chicken breast from your freezer, We'll put everything directly in the crockpot this time.  Add, one bag of frozen carrot, peas and onions.  Place 4 cups of water, and 2 packages of chicken flavored ramen noodles and seasoning packet to the crockpot.  I like to add some dried celery to my bowl, and salt and pepper.  Serve with some baked Rhodes Texas Rolls and they will forget they are eating ramen noodles.
