Cookin' with Coupons

This week I've got 2 meals, and 1 side for you to try.  I couldn't pass up talking potatoes and sharing a family favorite with you.

Meal #1  Cajun Skillet Pork Chops
BUY: Illini Pork Chops on sale, pop them in a zip bag and coat with a seasoning mix  from Lawry's marinades coupons.  Or, prepare your own:   creole seasonings, add paprika, garlic powder, cayenne pepper, black pepper, and a tablespoon of flour. Put 3 T of olive oil in the skillet.  Cook on medium to ensure the chops are thoroughly cooked while the outside is merely golden.  Pair this meal with stock vegetables, and side of potatoes on sale this week.  Here are some side dish coupons all on one link for you:  Green giant Steamers coupon,  Pillsbury Crescent Rolls coupon, Pillsbury Grands coupon,

Meal #2  Beef Stew
BUY:  My week always has a "non cook", cooking night.  This week it's beef stew.  Use your McCormick beef stew packet from your coupon stock.  Pick up 1.5 lb of stew meats pre cubed for you this week and on sale at County Market.  Add potatoes, fresh on sale for $1.99, and small bag of baby carrots.  Pick up a loaf of bread.

Meal #3 Potatoes
BUY: Let's face it, they are on sale and last a very long time.  One of my followers stocks potatoes when she sees a sale like this one.  She cans-yes with a canner and jars, potatoes.  I thought it seemed too much to save a mere $1 or two.  Then I heard her reasoning.  She brings peeled and cleaned potato pieces to a boil, then laddle them into quart jars.  When pressure canned, these are ready to drain and mash.  Prepared mashed potatoes.  Ohhh...she had my attention.  I never seem to have time to peel, boil and mash all at one time. I tried it for the first time last fall, and loved it. 
  
Other ideas include simply placing without touching on a cool dry shelf.  I have a garage sale dresser converted in my basement for holding extra foods.  It's my modern day root cellar.  I arranged one drawer as my potato drawer.  They last for over a couple months.

Our family favorite, "Aunt Susie Potatoes"  Wash and place whole potatoes in large stock pot to boil.  boil until tender.  Let cool, then messily cube (skins still on!) and place in baking dish.  Add 2 sticks of butter, 1 cup milk and 1/2 block of velveeta in pan.  Add one small jar of pimentos or pepper blend and mix.  Bake covered at 400 for 20 minutes.  Remove cover, stir and bake another 20 minutes.  

FROM STOCK:   Mt Olive pickles and peppers go on sale often, these peppers can be handy to chop and toss a Tablespoon into any dish.  Usually the ad will list the pickles, and the peppers are on sale as unadvertised items. Sign up for a free coupon.
