Cookin with Coupons

The Rockin Roast Sale makes crock pot meals easy this week.  Try these three: 

Meal #1  Dr. Pepper Pork Roast
Oh yes.  It is not an error.  I was leery the first time I tried this but now this is one of our favorite roasts.  It's really simple. Slice one medium yellow onion and place in bottom of crock pot.  Add one package of Welch's dried fruit packets. (Get free sandwich keeper off and free trial of fruit snacks).   It gives it just enough sweet flavor.  Place pork roast, sprinkle with cinnamon, and then pour 1 to 2 cups of Dr. Pepper on top.  Let cook slow for 4 hours on high, or 8 on low.  You home will smell wonderful!  The pork will be soft and very juicy. It will have a nicely spiced flavor, not syrup like at all.  Both Pork roast and Dr. Pepper are on sale this week.

Meal #2  Roast and Mushrooms
Any Beef roast that is on sale will do.  Place one roast, one can of Campbell's French Onion soup Coupon, one can of Campbell's Cream of Mushroom Coupon, and a carton of fresh mushrooms from the produce department.  Add 1 cup water.  This is great served with Mashed potatoes.  
From Stock:  Campbell's soups (4 weeks ago) , and potatoes from last week's sale.

Meal #3 Roast and Vegetable Stew
Bottom Round Roast cubed works well for this recipe.  The key is the stew mix.  I reuse Pillsbury Frosting containers to make up my own mixes each fall.  Incidentally, I cute my canisters up by grabbing FREE scrapbook paper designs and then typing the recipe on top and printing on cardstock.  Makes the canisters look country chic.   This beef stew mix is fantastic!  Add one Tablespoon of mix anytime to make a roast stew that will satisfy the entire family. In container mix: 
1 cup all-purpose flour
1 teaspoon dried rosemary, crushed
2 teaspoons dried oregano
2 teaspoons ground red pepper or cayenne pepper
2 1/4 teaspoon onion powder
1 tablespoon dried basil
1 tablespoon celery seed
2 tablespoons salt
2 1/4 tablespoons black pepper
2 1/4 tablespoons paprika
2 1/4 tablespoons garlic powder

 **Tip, I keep the mix ingredients on the side of the container so I can remake the mix without looking it up.  I do the same with Southwest Onion rub, Steak Seasoning, Taco Seasoning, and Rotisserie Chicken rub. 
Add vegetables:  Potatoes, onion, can green beans, can corn, carrots diced, and celery. Again, cook on low 4 hours, or high 8 hours. Pick up fresh rolls from the bakery to have this this meal.  They are great for dipping!
