Cookin' with Coupons

We are on a holiday 2 week sale.  Our ad remains the same, and the sales are really good.  For our Cookin section I'm making two assumptions.  First, that you already have plans for your Thanksgiving feast, so you do not need more holiday recipes. You will shop one time for all your needs so you need to make one big list.   Second, That you will have left overs! Let's use what we buy.  Keep back some of these ingredients as you fix your Feast.  Small amounts of Chopped celery, onion, and turkey can make your next meal when you plan ahead. Meal #1 Grilled Turkey Sandwiches
Pick up a special loaf of bread while shopping to make these turkey sandwiches post Thanksgiving.  I love the Peppridge Farm swirl half pupumpernickel /half rye bread.  For a nice melted cheese add either Kraft swiss cheese slices (Use in ad coupon to save $5 on any 10) or President Brie cheese.  Both will give a turkey sandwich a nice flavor.  The Cheese makes the sandwich, so be sure to add it to your shopping list.   Kids like the brie because it melts so well.  Next, add a fresh slice of tomato, some mayo and sprinkle with some basil.  

Meal #2 Waldorf Salad
Most of these ingredients will be part of your Thursday meal, we're just going to fix them up differently for the salad.  In a large salad bowl add:  2 cups cubed left over turkey, 1 cup of tiny diced celery, 1 diced apple (green is nice and tart, just keep one out of the pie), 1 cup of grapes, 1/2 cup of pecans, 1/2 cup yogurt, 2 spoons of Mayo, 1 spoon of sugar (I like mine sweet), 1 spoon of honey, salt and pepper to taste. Mix all thoroughly and allow to rest.  Serve minimum of one hour later.  Sweet and good!

Meal #3 Ham and Rice casserole
 We always have green beans left over. Each year I say we are not serving green bean casserole again, but then it's a tradition, so I fix it anyway.   What to do with all the beans?  What to do with the Cream of Mushroom all around the beans? I finally found a solution.  Take your left over Green bean dish (mushroom, and fried onions too) and mix with 2 cups of cooked rice (uncle ben's mix or Knorr mix will add extra flavor) , and 2 cups of cubed ham (from stock last week's Farmland will do).  Mix and place in casserole dish.  Cover with Kraft shredded cheddar cheese and bake. It makes a great Sunday night after Thanksgiving dish, and finally-the green bean dilemma is solved.
