Cookin with Coupons

We're back with some new meal ideas.  I am finally out of my Thanksgiving mindset and ready to get back in the kitchen.  This week I'm preparing simple meals with my coupons stock and just a couple of add in's from this week's sale. 

Meal #1  Illini Chops
These just pop out at me on the sale this this week.  Thick juicy chops. I have tons of Weber peppercorn rub mixes from a great coupon raid a few months back.  These can back in the oven at 450 for 20 minutes and be ready to go.   The Betty Crocker potatoes are on sale, and we all have BC coupons!  Pick up some Yukon Gold to add to the chops for a simple meal.  Add a fresh tossed salad, and it's a fresh easy night.

Meal #2  Pork Butt Roast  **on sale this week
Did you know, that you can buy a HUGE roast and the meat counter will cut it for you?  They will.  I have even seen them put frozen turkey's or chicken's through the bandsaw.  So if you have a household of 2, you can bake half a chicken or half a turkey, or in this case-a half a Pork Butt Roast. 

Tonight we're cooking half the pork roast with just salt and pepper in the crock pot.  After 4 hours, I'll shred the pork and add a bottle of freebie bbq sauce.  We have some Kings Hawaiian hamburger rolls from coupon steals back in September that I need to get thawed out so these make perfect sandwiches. 


Meal #3 Chicken and Veggie Bake
 We all have the CM boneless chicken breast ready and waiting for a meal like this one.  Cube one package of frozen chicken.  Use one package of Stove Top bread mix, 1 T of butter, 1 cup water, 1 bag of mixed frozen veggies and mix all in casserole dish.  Then top with 1 bag of Sargento cheese.  This is a nice slow bake, 350 for an hour.  We like a good mix of vegetables, so we often have onions, carrot, broccoli, and potato in our mix.  Add fresh and frozen to make this meal easy.
