Cookin with Coupons

This week is busy busy busy for me.  I need some quick ideas that make it seem like I've been cooking for days!  

Recipe #1  Broccoli Carry In Salad
I can not take credit for this simple plan.  It was on our carry in for our beekeepers meeting last week. I'm now prepping it for our Coupon Club's holiday party tomorrow.   The inspiration came from one of our members who said it's a sure fire success on any buffet table.  To start,  you need  2 lbs of broccoli, fresh is best!  Pop off just the tops for the salad.  Then In another bowl, mix 1 cup of Kraft mayo (on sale), 1/2 cup of Sugar, and 1 T of lemon juice.  Stir.  Then add 1 box of Sun Maid raisins (look for $.30 on 1 peelie), 1 fine chopped red onion, and 1 bag of Hormel Real Bacon (save $1 on 2 coupon)  pieces.  Coat all with the mayo mixture.  Now add the broccoli  and toss all.  Sit overnight in fridge and its ready to serve.  

Recipe #2 Strawberry Salad
Grab a couple bags of spinach salad mix by Dole (use coupon to save $1on 2), then add a small bag of pecans, a half a bag of Kraft shredded mozzarella cheese and toss.  Cover with a quick whipped up dressing of 1/4 cup of balsamic vinegar, 2 T of honey, and a 1/2 cup of olive oil.  That's it!  The strawberries make is special.  You can sub in raspberries or blueberries, both are on sale in the frozen section this week. 

    
Recipe #3  Coupon Buckeyes
We all have the ingredients for simple buckeye holiday candy.  We just had Peter Pan peanut butter on sale, Powdered sugar (penny pincher) and Butter!  So this should be easy to make just by opening the pantry doors.  Use one stick of softened butter, 2 1/2 cups of powered sugar, 1 tsp vanilla, 1 cup of Peter Pan peanut butter, 1/2 tsp salt.  Mix well by spoon.  If you are planning to allow kids to roll up the balls, which is always fun, spray their hands with a bit of Pam (use $1 on 1 All You coupon)  to keep it from sticking and from getting all over everything they touch!  Roll balls out about 1 inch thick.  Melt chocolate almond bark, which has been in the on sale bins at my store the past 3 weeks, and dip by use of toothpick into the creaming chocolate.  Sit on nice wax or parchment paper like Reynolds, until cooled.  This is a simple fun family holiday candy to make.
