Cookin with Coupons 1/10

This week is our annual meat stock up week.  I love buying whole chicken at $.88 per pound.  Here are some great meals to prepare with your values.  Plan enough whole chicken to make one meal per week over the next 13 weeks

Meal #1 Early Week Chicken
 I love my rotisserie.  A whole chicken cooks up nicely in less than 40 minutes.  However, not everyone has one.  this chicken can be baked in the oven just as easily, you may want to flip it, to roast the skins.  I usually stuff the inside of my bird with a mix of onion or garlic, celery, and salt and pepper.  It just helps the flavor.  Then I lightly coat the outside of my fresh cleaned and dry chicken with canola oil or spray, then toss a mixture of herbs such as sage, rosemary and thyme, fresh cracked pepper.  

Tip #1, you can prepare and coat more than one chicken at a time.  Freeze the extras to bake later.  OR, bake more than one, freeze the baked version and serve later.  

Tip #2, I keep a mix! I've made myself to easy rotisserie coating.  It's equal parts of the herbs, in a sealed plastic container.  I coat the chicken in a clean grocery bag.  Yes, recycling at it's best.  It covers much better.  

Tip #3 It's an early week chicken, because we're going to use the left overs for meals 2 and 3.  De-bone all meat and refrigerate for late week meals.

Meal #2  Baked Chicken and Spaghetti
Coat baking dish with cooking spray and place 2-3 cups of leftover chicken in bottom.  In a seperate bowl mix 1 16 oz container of Prairie Farms cottage cheese and 1 bag of frozen Birdseye spinach. Layer cheese mixture over chicken.  Next add a layer of cooked  Creamette spaghetti noodles, these are often on sale with our penny pinchers and just as easy and tasty as lasagna.   Pour a jar of Red Gold Pasta sauce,  and top with a bag of Kraft Mozzerella cheese.    Bake for 30-40 minutes at 400 until done.

Meal #3 Easy Divan Chicken
When veggie in are on sale in the freezer, it's a good time to add more to your meals.  Let's add 1 package of steamed Birdseye Brocoli to bottom of a prepared baking dish.  Next layer your diced leftover baked chicken.  Next, add in a can of Campbell's Cream of Chicken soup, and I like to add in a can of pre-sliced County Market brand mushroom pieces.  Top with Cheese-Glorious Cheese!  Bake for 15 minutes at 350, and serve.
