Cookin With Coupons 1/3

Boneless chicken is on sale for $1.88 per pound.  I picked up three of the largest packages I could find for three great meals.

Meal #1  Mix and Match Chicken Bites
My daughter loves having Chinese food in your lunch box at school.  I make up small cup sized containers of breaded chicken bites for her and she microwaves it and tosses the pieces with a sauce of her choice.  Combined with steamed veggies, rice with even more veggies and she has a good filling lunch.  To batter the chicken quick and easy mix the batter and stir in ALL the cubed chicken.  Then put the entire battered mess in the wok (or frying pan) and start frying it up.  As it fries, use a spoon to split the pieces apart.  It's easy and cooks thoroughly without you trying to drop the pieces into the oil.

Batter:
1/2 c flour
1/4 c cornstarch (use newspaper coupon to save $.40 on 1 Argo product)
1/2 t baking soda
1 egg white
1/3 c water
T oil

 Toss it with Kikkoman's stirfry sauces.  Coupons and sales are easy to match,we always pick up and maintain a good stock of Sweet and Sour, Teriayki and Hot Chili pepper.


Meal #2  Creamy Chicken and Potatoes
 This is a slow cooker  favorite of ours.  Line the bottom of pot with Red potatoes-quartered, one small onion sliced, and one bag of baby spinach like Picsweet. Pour over one can of Campbell's cream of soup, We stick to Mushroom, but I've had Celery and it's good too.   Place 4 large boneless skinless chicken breasts on top of vegetables cover and heat for 6 hours on low. 


Meal #3 Italian-Mex Chicken
This is a fix ahead freezer concoction I created with my coupon staples.  Take 3 large chicken breasts and add half a bottle of Ken's Italian dressing.  Toss the whole thing in the freezer.  On Fix it day, I place the contents of the bag plus I add 1 full bag of Picsweet Fajita blend frozen vegetables in the slow cooker for 6 hours on low.  That's it!  Freeze it then slow cooker.   Serve with a quick bake bread from Pillsbury to complete the meal.  No one else has to know it was this simple :)
